I hope everyone had a FANTASTIC week off from school, and you are all ready to come back and focus on work. We are coming into the final stretch! Remember to work hard, ask lots of questions, and try your best.
 
I was not able to travel down south as planned, so I spent the four days off I had working on lesson plans for the remainder of the year, finalizing field trip information, and spent time with Olivia, Jeffrey, and my puppies.
 
I love to create in the kitchen, so I relaxed by cooking and baking. Two dishes that came out wonderfully, were roasted beets with a thyme, honey red wine vinaigrette, and a braised fennel and segmented orange salad with a walnut pesto. We've been enjoying all the seasonal fruits, too.
